Face Down

Weather: 85 & Sunny
Drinks: Margaritas

Since having this dip last week at a party, I procured the recipe and have been face down in batches of it ever since. It is in this dip where my last iota of hope for a bikini body this year died. RIP skinny me!

2 cans shoepeg corn, drained
2 cups finely shredded cheddar cheese
¾ cup mayonnaise
½ - ¾ red onion- finely chopped
½ jar jalapeƱos – finely chopped

Mix all ingredients in a large bowl & salt/pepper to taste. Refrigerate for an hour or more to let flavors blend. Serve cold with tortilla chips. YUMMY!

For those of us not well versed in the art of anything kitchen-y, can you explain what "shoepeg corn" is?
It's sounds dee-lish!

It sounds yummy. I have a much beloved dip that includes diced onions, mayo and cheese (in equal amounts) mixed together and baked until all bubbly. MMMMMMM.

Shoepeg corn is small white corn - I buy it canned and it's shelved with the canned yellow corn at my grocer. Green Giant brand in the 7 oz is what I used. http://www.bettycrocker.com/Products/Green-Giant/Products.aspx
